Pesto, Chicken, Artichoke and Roasted Red Pepper Pizza

I’ve been making this pizza for years. I wish I could find the recipe I used the first time but just know I didn’t come up with this one. Someone else out there on the interwebs should get the credit.

The pesto as the sauce with the other ingredients makes for a nice mix up from my usual pizza combination. The rotisserie chicken and jarred veg make this one super easy. If you use store bought pesto it becomes even easier.

Ingredients

  • Pizza Dough, good quality store bought or make your own
  • Rotisserie chicken, pulled and chopped (I used about half)
  • 1 jar artichoke hearts, chopped
  • 1 jar roasted red pepper, cut julienne
  • Mozzarella cheese, shredded (I prefer low moisture cheese)
  • 4 teaspoons minced garlic + 2 whole cloves
  • 1-1/3 cup loosely packed basil leaves
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2/3 cup extra virgin olive oil
  • 2/3 cup grated Pecorino Romano cheese
  • 4-5 tbsp raw walnuts

Directions

  1. In a food processor or blender add whole garlic, basil leaves, Pecorino Romano, walnuts and season with some salt and pepper. Pulse the mixture until combined. Turn the processor to a low setting and drizzle in the olive oil until you get the consistency you want. Re-season with salt and pepper if needed. Set aside.
  2. Add pizza stone to middle rack of your oven and heat to the highest setting your oven has (500-550F).
  3. Meanwhile, stretch your dough to the thickness you prefer. Add a little flour or water if the dough is wet or dry. Make roughly a circle. If you want an extra crispy crust add the dough to the oven and bake a few minutes.
  4. Add a thin layer of sauce, shredded cheese and other toppings. Sprinkle with grated cheese.
  5. Add the pizza to the pizza stone and bake until cheese is melted.
