Copy Cat Mexican Pizza like from “the bell”

As a kid one of my favorite things to eat was the Mexican Pizza from that fast food restaurant with “the bell”. Crispy, savory, gooey, yummy all in a little box for ease of consumption. Having lived in Europe through high school, when we got back to the states I wan’t a Chick-fil-a sandwich and a Mexican Pizza. As I got older, my metabolism slowed down and I just wanting to eat healthier, I cut out all fast food (well I still eat Chick-fil-a). So no more Mexican Pizzas. 😦 I don’t know why, but until the other day it never occurred to me to make a version of the Mexican Pizza at home where I can control the ingredients. I Googled a few recipes and got very excited. We switched out ground beef for ground turkey to make it a little healthier. We used refried black beans and we didn’t “fry” the tortillas we baked them. I added too much beans and turkey in the middle but for my first try, this went VERY well. We’ll be making these again and again. This recipe will make enough for four hungry people or two people twice. We added rice as a side so I ate one and a half pizzas.

Ingredients

  • 6-12 flour tortillas
  • Olive oil
  • Canned refried black beans
  • 1 pound ground turkey
  • Low-sodium taco seasoning
  • 1 can enchilada sauce
  • Grated Mexican cheese
  • Canned black olives
  • 1 green onion, sliced thin

Directions

  1. Heat the oven to 400F degrees. Using two sheet pans, or do this in batches, brush tortillas with olive oil on both sides. Season with a little salt. Bake for 8-12 minutes flipping a few times until crispy. Set aside and allow to cool.
  2. Heat a large non-stick pan over medium heat. Coat the pan with olive oil and brown the turkey. Once cooked through add the tacos seasoning and a half cup of water or so. Mix and allow to reduce, remove from heat.
  3. Add the refried black beans to a bowl and microwave until warm. This will make them easier to manage.
  4. Place three of the tortillas on a sheet pan. Add a base of the refried black beans. Next add some of the ground turkey mixture, don’t add too much like I did. The over stuffed tasted great but it oozed out of the pizza, not a big deal but it wasn’t “authentic”. I added a little drizzle of the enchilada sauce on the turkey taco mixture. Next add another tortilla. Top that with enchilada sauce and cheese. Place back in the oven until the cheese is melted.
  5. Finally, garnish with the olives and green onion and slice in quarters. Enjoy!
