Buffalo Chicken, Bacon and Bleu Cheese Pizza

I like buffalo chicken wings. I like pizza. I like bacon. I like bleu cheese. Why not make that a pizza? I think this came about one day hanging with my niece and nephew. I wanted to encourage them to cook so we started making pizzas. They could put whatever they wanted on their pizzas. I think my nephew started with the buffalo chicken and my niece added the bacon and bleu cheese. It really is very good. Use the pasta sauce if you don’t want to over do the buffalo sauce.

Ingredients

  • Pizza Dough, good quality store bought or make your own
  • Pasta sauce, or you can use buffalo sauce. I’ve done both.
  • Rotisserie chicken, shredded
  • Your favorite buffalo sauce
  • 6-8 oz Mozzarella cheese, shredded
  • Bleu cheese, crumbled
  • Bacon, cooked and chopped

Directions

  1. Add pizza stone to middle rack of your oven and heat to the highest setting your oven has (500-550F).
  2. Meanwhile, stretch your dough to the thickness you prefer. Add a little flour or water if the dough is wet or dry. Make roughly a circle. If you want an extra crispy crust add the dough to the oven and bake a few minutes.
  3. Add the shredded chicken to a large mixing bowel and toss with the buffalo sauce. Set aside.
  4. Drizzle with a thin layer of buffalo or pasta sauce over the crust. Add shredded mozzarella cheese to the crust. Top with the buffalo chicken, blue cheese crumbles and bacon.
  5. Add the pizza to the pizza stone and bake until cheese is melted and the crust is crispy.
