Local Shitake and Swiss Burger with Black Garlic and Soy Aioli

Who doesn’t like a mushroom and Swiss burger? This one is elevated with the black garlic and soy sauce aioli.

I had never worked with black garlic myself. I’ve had it at restaurants and seen it on cooking shows but I had never even seen it in any of the stores we shop at. One day we were in our favorite local grocery, Swamp Rabbit Café and Grocery, lo and behold, there it was. Organic black garlic. I grabbed a package, brought it home and there it sat for months. I didn’t really know what to do with it, so I Googled it. I found a lot of aioli recipes but I added the soy sauce to add the Asian flare and to add even more umami. This one is good y’all. I’d put that <blank> on anything. 😀

We served the burgers with Kimchi Air Fried Tater Tots with Spicy Aioli.

Ingredients for Mushroom and Swiss Burgers

  • 1 lbs ground beef (we used Beyond Beef)
  • 4 brioche buns
  • 1 lbs Shitake mushrooms, sliced
  • 4-6 slices Swiss cheese
  • Olive oil
  • Salt and pepper

Ingredients for Black Garlic and Soy Aioli

  • 4-6 black garlic cloves
  • 1 egg yolk
  • 1 tbsp white vinegar
  • 1 tbsp Soy Sauce
  • 3/4 cup olive oil
  • Salt and pepper to taste

How to Make Black Garlic and Soy Aioli

  1. Add the black garlic, egg yolk, vinegar, soy sauce to a food processor. Mix until smooth, scraping down the sides of the processor as needed.
  2. While the processor is running, slowly drizzle the olive oil. Continue to mix until combined. Season with salt and pepper to taste, you shouldn’t need much as the soy adds enough.

How to Make Shitake and Mushroom and Swiss Burger

  1. Divide the beef into equal portions, approximately 4 oz. patties. Season with salt and pepper and set aside.
  2. Heat a large non-stick pan over medium high heat. Add olive oil to coat the pan. Add sliced mushrooms and cook until softened. Set the mushrooms aside.
  3. In the same pan, add the burger patties and cook on both sides until desired doneness. Add a slice or two of the cheese and cover the pan until the cheese melts.
  4. Toast the buns.
  5. Add black garlic aioli to the top and bottom of the buns. Top with a burger patty and top the patty with mushrooms.
  6. Enjoy.
