I think I first remember hearing about the Gibson cocktail on an old episode of the original, black and white Perry Mason TV show. That show was so cool. The ladies were beautiful, the men rocked suits doing yard work and the cars… just wow. They always had a cocktail (and cigarettes too😂).
Anyway, I researched the drink in my obsession with old school cocktails. I love gin and savory/boozy cocktails and this one seemed right up my ally. Also, you can’t get more simple than two ingredients. Well, three. The gin and dry vermouth are fantastic but when you add the cocktail (pickled) onions, it adds an extra umami.

Ingredients for a Gibson Cocktail
- 2.5 ounces gin (or vodka if you must)
- .5 ounces dry vermouth
- 2-3 cocktail onions for garnish
How to make a Gibson Cocktail
- Add gin and dry vermouth to a cocktail mixer. Add ice and stir until chilled.
- Strain into a chilled cocktail glass.
- Garnish with 2 or 3 cocktail onions.
- Enjoy!
