The Bee’s Knees Cocktail

The Bee’s Knees cocktail is a prohibition era drink. If you follow this blog, you will have noticed my obsession with old-school cocktails. This is yet another example and it is SO simple and delicious. Only three ingredients (+ a lemon twist)! The botanicals from the gin and the hint of sweetness from the honey simple syrup balance the tart, fresh squeezed lemon juice. If you are like me and have a preference for cocktails that are boozy and not too sweet, this one checks both boxes.

Ingredients for the Bee’s Knees Cocktail

  • 2 ounces gin, I like Bombay Sapphire
  • 3/4 ounce fresh Lemon Juice
  • 1/2 ounce Honey Simple Syrup
  • Lemon Twist for garnish

How to make a the Bee’s Knees Cocktail

  1. Add gin, lemon juice and honey syrup into a cocktail shaker with ice.
  2. Shake until chilled and combined, 15 seconds.
  3. Strain into a chilled coupe or Nick and Nora cocktail glass.
  4. Garnish with a lemon twist.
  5. Enjoy.

Ingredients for Honey Simple Syrup

  • 1/2 cup local honey
  • 1/2 cup water

How to make Honey Simple Syrup

  1. Add honey and water into a small sauce pan over medium heat.
  2. Whisky to combine.
  3. Allow to cool.
  4. Pour into a air tight contain and keep in the fridge for your next Bee’s Knees.
