So, I’ve made the Paper Plane cocktail before. I did not follow the official recipe which calls for equal parts bourbon, Amaro, Aperol and lemon juice. I modified it to, the first time, to add more bourbon, slightly less Amaro and Aperol and half the lemon juice. Well, even with my original tweaks, it was still a bit bitter and not boozy enough. So below is my final version, which I like very much. The extra, extra portion of bourbon + using a high proof to boot, made this drink better. Cutting the Amaro and Aperol made it less bitter. I also double strained it because the first version had a slight foam on the top, see below.

Ingredients for a Paper Plane Cocktail
- 2.5 ounces high proof bourbon
- .75 ounces Amaro
- .75 ounces Aperol
- .5 ounces fresh lemon juice
- Lemon twist for garnish
How to make a Paper Plane Cocktail
- Combine all ingredients into a cocktail shaker with ice. Shake at least 20-30 seconds until fully combined.
- Double strain into a frozen coupe or martini glass.
- Enjoy!
