Where we live, we didn’t have a Panda Express. Visiting in-laws in Indiana introduced me to the fast-casual restaurant. Then we got one all the across town, in a very busy area we try to avoid. Then we got one close by our home. Then we got another one close by our home. Don’t get me wrong, we still like our local hole in the wall Chinese takeout. There is no denying that Panda Express is good stuff. We started getting take away on a fairly regular basis. Their app is very easy and convenient to use.
One of the side items we get is the “Super Greens”, a mixture of kale, cabbage and broccoli. It is one of the more healthy items they offer and it seemed super simple to make. After Googling the copycat version, we came up with this, slightly modified version. One minor tweak is we use baby bok choy instead of cabbage.

Ingredients for Super Greens (Panda Express Copycat)
- 1 large or 3 baby bok choy, sliced
- 1 bunch kale, sliced
- 1 head broccoli, cut into small florets
- 2 garlic cloves, minced
- 1 inch + ginger, minced
- 1 tsp + crushed red pepper flakes
- 2 tbsp low sodium soy sauce
- Neutral oil (canola), to coat the pan
- 1 tsp sesame oil
- ~2 tbsp water for steaming
How to make Super Greens (Panda Express Copycat)
- Heat a large pan or wok that has lid that fits thigh over medium-high heat.
- Coat the pan with neutral oil and sesame oil.
- Once the oil is shimmering add minced ginger and garlic and toss until fragrant.
- Add crushed red, bok choy, kale and broccoli. Toss to coat and cook for a minute.
- Add soy sauce and water and cover the pan with lid and turn off the heat.
- Allow the pan to steam until all of the veggies are tender but still have bite.
- Toss once more before serving warm.
- Enjoy.
