This cocktail is my updated take on a 1930s classic I discovered on Difford’s Guide. The original combines rye, lemon, absinthe and egg white but I wanted something with a little more bite. Enter: barrel-proof rye for depth and heat, plus ginger simple syrup to add warmth and aromatic spice. The result? A beautifully balanced cocktail that slithers between bright, boozy, silky and just a touch dangerous.

The Rattlesnake works because every ingredient plays a distinct role, creating a balanced cocktail that’s bold, aromatic and silky-smooth:
- Barrel-Proof Rye = Heat + Structure
Using a higher-proof rye gives the drink intensity and backbone. Rye’s natural spice stands up to the citrus and absinthe instead of getting lost, which keeps the cocktail sharp, lively and complex. - Lemon Juice = Bright, Fresh Acidity

- 2 oz barrel-proof rye whiskey
- 3/4 oz fresh lemon juice
- 1/2 oz ginger simple syrup
- 1/4 oz absinthe
- 3 dashes cocktail foamer (or 1 egg white)
- Lemon twist, for garnish
How to make The Rattlesnake Cocktail
- Pour the absinthe into chilled coupe or Nick & Nora glass. Swirl to coat and disregard.
- Add the rye whiskey, lemon juice, ginger simple syrup, absinthe and cocktail foamer (or egg white) to a shaker.
- Dry shake (no ice) for 10–15 seconds if using egg white or foamer. This helps build that silky texture.
- Add ice and shake again until chilled.
- Fine strain into a glass.
- Express a lemon twist over the top and garnish.
