Air Fried Artic Char with an Easy Citrus Hollandaise

Years ago on Isle of Palms, SC, we had an special at The Boathouse at Breach Inlet: Arctic Char with veggies + citrus hollandaise. That memory popped up recently, so I had to try a copycat.

My version: Air-Fried Arctic Char 🐟 with sautéed local Swiss chard, roasted carrots, smashed potatoes, and citrus hollandaise. Ingredients came from a couple of favs—Broadwater Shrimp Co. + Swamp Rabbit Café & Grocery.

Easy Copycat Filet ‘O Fish Sandwich

This is a quick version of a McDonald’s Filet ‘O Fish sandwich and fries using frozen ingredients cooked in an air fryer. A customized tartar sauce adds flavor, catering to nostalgia for the wife, despite our fast food avoidance.

Gumbo with South Carolina Shrimp, Andouille and Rice

When making a great gumbo, focus on the roux and high-quality local ingredients. The roux determines texture and color, requiring time and attention. Local ingredients like Andouille, South Carolina white shrimp, and Gold Rice add authentic flavor. The process involves slow rendering of bacon, preparing a dark roux, and adding key ingredients for a rich, flavorful result.
