Croque Madame Pizza

One of my favorite sandwiches of all time is a Croque Madame/Monsieur. It is basically a fancy grilled ham and cheese. The Madame just adds a egg to the top of the Croque Monsieur. I’ve had this sandwich so many times in so many places and they all varied a bit, but they were all amazing.

Like so many other things I like, why not make it a pizza. A few Google searches and reviewing several different recipes, I came up with this masterpiece. If you are new to cooking, this is a great recipe to learn a few fancy yet easy techniques to impress your friends and family. How about a Béchamel sauce? WOW, impressive. How about a Mornay sauce? Are you a fancy French Chef? Why yes, yes you are.

Thin crispy crust, rich cheese sauce, salty prosciutto, gooey, melted cheese. Just a little kick from the Dijon and pepper. Not to mention the egg yolk that gets all over the place when you slice it up… OH BOY, this one is DÉLICIEUX or DELIZIOSO.

Ingredients for a Croque Madame Pizza

  • 1 pizza dough
  • 8-10 thin slices of prosciutto
  • 4-5 oz Gruyere cheese, shredded
  • 4-5 oz low moisture Mozzarella cheese, shredded
  • 2 tbsp olive oil
  • 2 tbsp AP flour
  • 1 tbsp garlic, minced
  • 1 cup milk
  • 1 tbsp Dijon mustard
  • 1-2 fresh local eggs
  • Cracked black pepper

Directions to make a Croque Madame Pizza

  1. Heat the oven with a pizza stone to 550° F.
  2. Stretch or roll the pizza dough to your liking. I prefer a thin crispy crust, so I cook the crust a little before adding toppings. If you are like me, add the dough to the pizza stone for a few minutes.
  3. Heat a medium sauce pot over medium heat. Add olive oil and garlic. Cook garlic until softened and fragrant, whisk in flour. Continue whisking until the mixture turns blonde. Slow whisk in the milk until combined and thickened. Congrats you have a Béchamel sauce.
  4. Whisk in half of the shredded Gruyere cheese and Dijon mustard and allow to cool. Congrats you have a Mornay sauce.
  5. Top the pizza crust with the Mornay sauce and the rest of the cheese. Drape the prosciutto over the pizza to your liking.
  6. Add the pizza to the pizza stone and cook until the cheese is mostly melted and the prosciutto is starting to crisp up.
  7. Remove the pizza and crack the egg(s) in the center. Place the pizza back in the oven until the eggs have firmed up.
  8. Remove the pizza, top with cracked black pepper to taste and allow to cool slightly. Enjoy!
