Italian Cheese Burger with Provolone, Charred Heirloom Tomato and Roasted Red Pepper Aioli on Ciabatta

This Italian burger was inspired by some heirloom tomatoes that were about to go bad and I had some ciabatta on hand.

Ingredients for Italian Burger

  • 1 lbs beef (we used Beyond Beef)
  • 4 ciabatta buns
  • 1 large heirloom tomato, sliced
  • 4-6 slices provolone cheese
  • Arugula
  • Olive oil
  • Salt and pepper

Ingredients for Roasted Red Pepper Aioli

  • 2 whole, jarred roasted red peppers
  • 1 small bunch of basil
  • 1 cup mayonnaise (we used Vegenaise)
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

How to Make Roasted Red Pepper Aioli

  1. Add all the ingredients except the mayonnaise to a food processor and pulse until smooth.
  2. Add mayonnaise and pulse to combine.
  3. Season with salt and pepper to taste.
  4. Place in the refrigerator until ready to use.

How to Make Italian Burgers

  1. Turn your oven broiler on. Add the sliced tomato to a sheet pan.
  2. Drizzle olive oil over the tomatoes and season with salt and pepper
  3. Roast until slightly charred on one side. Remove from oven and set aside.
  4. Divide the beef into 4 portions, approximately 4 oz. each. Season with salt and pepper.
  5. Heat a large non-stick pan on medium high heat. Coat pan with olive oil and add the burger patties.
  6. Cook burgers on both sides until desired doneness is achieved. Add one to two slices of provolone cheese on each burger. Remove from the heat and cover until cheese is melted.
  7. Toast the ciabatta.
  8. To serve, add roasted bell pepper aioli to both insides of the ciabatta. Top with the burger, tomato and arugula.
  9. Enjoy!
