I’ve been making different versions of fries that are not fried. I started baking them which was fine. Then I got an air fryer which made a big difference. I’m posting the most impressive of the air fried versions. Skinny fries are by them selves pretty awesome. When you add duck fat and truffle sea salt, they go over the top.
You don’t have to use duck fat. You can use olive oil or non stick spray. You also don’t have to use truffle sea salt, you can use regular salt. You can also slice the potatoes thicker with or without the mandolin. With that said, my sweet spot is this recipe.
If you don’t have a mandolin, you can hand slice the potatoes. You’ll never get the same consistency as a mandolin, which is the reason. Good fries are good. Consistent thickness. Make sure they all cook approximately the same.
You also don’t need an air fryer. As I pointed out earlier. You can bake these. But again, I think you get much better results with the air fryer.
Some people prefer to peel their potatoes. I do not. I like the skins. Plus there’s a lot of healthy things in there. I think.
Equipment
- Air fryer
- Mandolin slicer
Ingredients for Skinny Fries
- 2-3 large russet potatoes
- Duck Fat or duck Fat spray
- Black truffle sea salt

How to make Air Fried, Duck Fat, Truffled Skinny Fries
- Using the mandolin slicer, on the small fries setting, carefully slice potatoes. I use a cut proof glove.
- Add thin sliced potatoes to a large bowl and cover with water. Allow to soak and agitate to remove outer starch.
- Drain the skinny fries and using a hand towel, dry thoroughly.
- Preheat the air fryer to 380F for 3 minutes. Spray duck fat spray. Add fries in batches if needed. Spray tops of fries with more duck fat.
- Cook skinny fries for 5 minutes. Season with Truffled sea salt. Toss and cook in 5 minute intervals for a total of 15 minutes or until crispy.
- If you are doing batches, preheat oven to 200F. Add first batch to a heat proof bowl and keep warm.
- Enjoy.
Optional Spicy Ketchup
- Add 2-3 tablespoons ketchup and 1 tablespoon of your favorite hot sauce to a mixing bowl. Whisk to combine.
- Options for hot sauce, we like Truff Hot Sauce or Sriracha.
