Air Fried Artic Char with an Easy Citrus Hollandaise

Years ago on Isle of Palms, SC, we had an special at The Boathouse at Breach Inlet: Arctic Char with veggies + citrus hollandaise. That memory popped up recently, so I had to try a copycat.

My version: Air-Fried Arctic Char 🐟 with sautĂ©ed local Swiss chard, roasted carrots, smashed potatoes, and citrus hollandaise. Ingredients came from a couple of favs—Broadwater Shrimp Co. + Swamp Rabbit CafĂ© & Grocery.

Lowcountry Bourride with Shrimp, Scallops, Salt Potato and Garlic Truffle Aioli

One of the things that gave us comfort during all of this covid-19 craziness has been at least looking at menus of restaurants we used to go to. One such restaurant I’ve been stalking is one of our favorite Charleston haunts, FIG. This recipe came directly as a copycat, even though I never actually ate…

Chicken a la Clinton (copycat of a copycat) Henry’s in Charleston, SC

I came across this recipe by accident. I was trying to find if anyone else had ever posted a recipe for Seafood a la Wando. I never found one so I made my own up. The good one is here, but I had an earlier, somewhat failed attempt, here. Anyway, I found this I guess…

Sean Brock’s Famous Husk Burger with Crispy Baked Wedge Fries

I never expected to be disappointed with this meal but I tried to manage my expectations. With that said, I was totally blown away with this burger. Most likely the best burger I have ever eaten. If interested, I made a meatless version of this same burger. A Meatless Version of the Famous Husk Burger…

Seafood a la Wando (Reboot)

Way back in 2012 I posted about one of my favorite dishes in Charleston, SC, Seafood a la Wando at Hank’s Seafood. It is indeed still one of my favorites. The crispy grit cakes, the fresh seafood, the rich buttery cream sauce. Oh and mushroom, bell pepper and green onion add earthiness, color and crunch….

Oven Fried Buffalo Shrimp Tacos with Bacon-Bleu Cheese Cole Slaw

Poe’s Tavern on Sullivan’s Island (South Carolina) introduced me to Buffalo Shrimp Tacos but The Boathouse (Isle of Palms) and Jack’s Cosmic Dogs (IOP/Mount Pleasant) introduced me to Bleu Cheese Cole Slaw. I’ve been making bleu (or blue) cheese coleslaw for years and year. The first time I had it, it was back to back days…

Top 5 Favorite Restaurants in Charleston, SC

I’ve seen a lot of list of the best restaurants in Charleston, South Carolina. Some are really good but all are based at the end of the day on personal preference. How much do you want to spend? What kind of food do you prefer? Can you get a reservation? These questions are much more…

Grilled Flank Steak with Black Eyed Peas and Cornbread Salad

Simple, easy and delicious. This was inspired by one of my favorite chefs. The salad came from Food & Wine magazine by Chef Sean Brock. I added the flank steak and simplified the salad. You can find the original salad recipe here. I grew up eating southern foods like black eyed peas, collard greens and…

Braised Pork Belly, Roast Beets, Sautéed Mustard Greens with Mustard Jus

My attempt at replicating a meal I had at FIG (Food is Good) in Charleston. I could never match what Chef Latta and the staff at FIG (one of my top two restaurants in Charleston) can do, but this turned out pretty good never the less. The meal I had at the restaurant is chronicled…

Skillet-Roasted Chicken, Farro with Acorn Squash and Kale and Herb Pistou

Beautiful. Sometimes that is how you have to describe food. One particular month, the cover of Bon appetit magazine particularly caught my eye. Not only did the dish on the cover look amazing, it happened to have been prepared by one of my favorite Chefs and at one of my favorite restaurants. I’ve been a…
