Pepperoni, Prosciutto and Pancetta Pizza

We LOVE pizza. I’ve been a little bit of a pizza snob for, oh, 20 years or so. I used to order delivery pizza once a week. Then I discovered store bought fresh pizza dough. With really good pizza dough and a pizza stone, you can make your own pizza at home with whatever toppings you want in half the time (or less) of delivery.

The pizza I ate in Italy featured a few high quality ingredients sparingly added. You could taste each ingredient. Most delivery pizza is loaded with tons of cheese and toppings. Cheese stuffed crust? Mozzarella bites crust? That is just not for me.

Our favorite local pizza joint is Sidewall Pizza Company. The pizzas they make are legit. Thin crust that is both crispy and also chewy. Minimal but highly flavorful toppings. They also have great salads and house made ice cream. I model my homemade pizza in that fashion. I don’t always achieve that but I try.

My 3P’s Pizza is a homage to the Protein pizza at Sidewall. In my version I use my favorite salty Italian meats. Pepperoni, prosciutto and pancetta.

Ingredients

  • Pizza Dough, good quality store bought or make your own
  • Pasta sauce, good quality store bought or make your own
  • Shredded mozzarella cheese (low moisture)
  • Pepperoni (Applegate Farms uncured is my favorite)
  • Proscuitto (deli cut thin, we use Boar’s Head)
  • Pancetta (cut thin or thick and diced, we use Boar’s Head)
  • Grated parmigiana reggiano or pecorino romano

Directions

  1. Add pizza stone to middle rack of your oven and heat to the highest setting your oven has (500-550F).
  2. Meanwhile, stretch your dough to the thickness you prefer. Add a little flour or water if the dough is wet or dry. Make roughly a circle. If you want an extra crispy crust add the dough to the oven and bake a few minutes.
  3. Add a thin layer of sauce, shredded cheese and other toppings. Sprinkle with grated cheese.
  4. Add the pizza to the pizza stone and bake until cheese is melted and the proteins are crispy.
