Pasta with Greek Yogurt and Chili Crisp (The Enhanced Version)

A while back, I came across a recipe in an issue of Bon Appétit magazine that completely intrigued me. Their version was the ultimate minimalist flex: just three ingredients (well, five if you count pasta water and salt). It was just pasta, Greek yogurt and chili crisp. That was it. The article read like a classic late-night fridge raid where the author and their roommates threw together whatever they had left. Super simple, ready in minutes and surprisingly clever.

The simplicity was beautiful, but here’s the thing: I don’t have roommates (just my wife) and my fridge and pantry are always loaded with goodies. I’m also a guy who always keeps a jar of chili crisp in the fridge with a reliable backup waiting in the pantry.

Because my wife tries to avoid lactose, I had to swap out the magazine’s called-for full-fat yogurt for a 2% lactose-free Greek yogurt. But pulling that fat back meant the sauce needed an extra layer of body and soul. So, I did what any food lover would do. I enhanced it.

I rendered down some crispy pancetta, threw in plenty of fresh garlic, deglazed the pot with a splash of dry white wine and folded in a generous handful of sharp Pecorino Romano. Just in case my culinary experiments totally sucked, I even charred some stecca bread and whipped up a side salad with an old-school homemade Catalina dressing as an insurance policy.

The insurance policy wasn’t needed. The pasta was an absolute home run and officially earned my wife’s coveted “would make again” seal of approval.


Ingredients for Pasta with Greek Yogurt and Chili Crisp

  • 1 lb Spaghetti rigati
  • 2 tbsp Olive oil
  • 1 cup Pancetta, diced
  • 3 cloves Garlic, minced
  • 1 cup Dry white wine
  • 2 cups Lactose-free 2% Greek yogurt
  • 1 cup Pecorino Romano cheese, grated
  • 1+ cups Reserved pasta water
  • Salt to taste
  • Chili crisp to taste

How to make Pasta with Greek Yogurt and Chili Crisp

  1. Cook the Pasta
    Bring a large pot of heavily salted water to a rolling boil. Drop the spaghetti rigati and cook for 5 minutes (or exactly one minute less than the package instructions suggest). You want it distinctly al dente because it will finish cooking in the sauce. Drain the pasta, making sure to preserve at least 2 cups of that starchy pasta water.
  2. Build Flavor Base
    Reduce the stove heat to medium. Coat the bottom of your empty pasta pot with the olive oil and toss in the diced pancetta. Cook until the fat is mostly rendered and the edges are starting to crisp up nicely, then drop in the minced garlic. Stir constantly until the garlic is intensely fragrant, being careful not to let it burn.
  3. Deglaze and Emulsify
    Pour the dry white wine into the pot, scraping up all those delicious, browned bits of pancetta stuck to the bottom. Let it simmer until most of the wine has evaporated.
  4. Toss and Create the Sauce
    Dump the cooked pasta back into the pot alongside the Greek yogurt and a half cup of your reserved pasta water. Grab your tongs and toss vigorously. Add the Pecorino Romano cheese and another splash of pasta water.
    Keep tossing and stirring until the yogurt, cheese and starchy water marry into a beautifully glossy, creamy consistency. OneFoodie Tip: Add a little more pasta water than you think you need. The yogurt will continue to tighten up and absorb liquid as it sits. Give it a final taste and adjust with salt if necessary.
  5. Plate and Serve
    Twirl the creamy pasta into bowls and top generously with chili crisp to your exact heat preference. Enjoy hot!

Why Spaghetti Rigati?

If you can find it, look for spaghetti rigati (spaghetti with tiny ridges running down the strands) rather than standard smooth pasta. Because Greek yogurt lacks the heavy emulsifiers of heavy cream, those tiny ridges act like little handles, grabbing onto the tangy, porky sauce and holding it perfectly with every single bite.
